Italians are most commonly known for their pizzas, pastas, cheeses, and meats. But there’s more to Italian food than wheat, meat, and dairy. The Italians are also known for their risotto, a rice dish cooked in broth to create a creamy consistency. Risotto is a perfect alternative for gluten-free travelers, or anyone looking for a wheat alternative. When I spent a week in Italy, I tasted a variety of risotto dishes, some served with sausage, others mixed with fresh vegetables. And of course, my favorite risotto of the trip was topped with truffles.
